After breaking, the real creation of the end product is taking place. Depending on the requirements and application of the final product, several modules can be incorporated in the further processing of the egg liquids.

Filtration and cooling
OvoPro offers a wide range of raw product handling systems to collect, filter and chill the yolks, whites and whole eggs. Filtration solutions range from simple dual to, state of the art, self cleaning filters. Cooling heat exchangers range from 500 to 20,000+ liters per hour. Our heat exchangers have three frame options: tie-bar, spindle and a patented hydraulic assembly.

Computerized or semi-automatic liquid distribution systems allow for quick and efficient product transfer to the different processing units. Advanced displacement pumps, flow panels and automatic valves operate together to gently transfer the delicate egg products.

Storing liquids
OvoPro offers single-wall, insulated and/or refrigerated stainless steel storage tanks, CIP cleaned, with gentle agitation to produce a homogeneous product without damaging the functional properties of the egg. Independent high-speed blending systems offer greater plant flexibility and economy of operation.

Pasteurizing
The OvoPro pasteurizers range in capacity from 500 - 20,000 kg/hour, the latter being the most powerful pasteurizer in the world. Our pasteurization systems are the safest and most efficient in the market. All our systems guarantee full pasteurization of every particle of product. No raw product will enter the pasteurized product section of the system. Our special double-wall regeneration section is designed to operate without the need for low efficiency water-egg-water systems or pressure differential controls.

Holding tube design reduces the product loss during transitions and guarantees the proper holding time at the right temperature. For each system OvoPro offers options such as homogenizers shear or high pressure, PLC with touch screen interface, pressure differential controls and single or dual divert valve assemblies. All our systems include  USDA/3A approved insulated/sloped holding tubes available from 2.5 to 5.0 minutes, depending on the time-temperature combination for the expected Log reduction.

Shock technology
The OvoPro Shock is a patented technology that harnesses the destructive power of cavitation and converts it into a homogenization and heating energy. The system applies direct heat to liquids without the use of a heat transfer surface. The system can operate for extended periods of time without the need for a cleaning cycle, because there is no heat transfer surface. As the liquid egg product passes through the OvoPro Shock, it is subjected to "Controlled Cavitation." Microscopic cavitation bubbles are produced and, as they implode, energy is released into the liquid egg products. This energy is harnessed for scale-free heating and microscopic mixing.

The egg particles are mixed at microscopic level, which increases the mass transfer rate for perfect homogenization. OvoPro Shock is a breakthrough in egg pasteurization technology that allows egg-processing plants to pasteurize egg products at high temperatures for extended periods of time, while protecting the functionality of the products.

Spray drying
OvoPro offers driers ranging in size from small pilot plant units to models for full-scale production facilities. Our driers come in many configurations, depending on your processing requirements. Process air can be heated directly, with natural gas, or indirectly, with steam, thermal fluid or indirect gas heating systems.

OvoPro accomplishes the vital process air/ product separation within the drying system through various combinations of product recovery cyclones and/or bag-houses. Spray drying systems are available in three different configurations: vertical tower driers, box driers and the compact V-bottom driers. They are available in capacities from 100 to 3,000+ kg/hr of water evaporation, with optional concentration systems for both egg  whites and whole eggs mélange and heat recovery systems.

End packaging
Packaging solutions include simple bucket filling to bag-in-box, bottle and Pure Pak® systems, for standard liquid and frozen products or extended shelf life products. Our systems can be designed to package a wide range of materials and sizes: 250ml containers, 50-20kg bags; 5-10kg buckets, pure-pack, portable tanks and 20,000+ liter tanker trucks.
